
This wine is produced by Dominio de Elbio, a new Ribera del Duero project from well-known winemaker David Gonzalez, recognised for his work across Bodegas Chivite, Viña Salceda and Gran Feudo within the Perelada stable. He was included in the Master Winemaker Top 100 2025, and brings meticulous attention to detail in the winery, with a clear focus on precision viticulture.
The vineyard is located in the renowned magic triangle of La Horra, Anguix and Roa in the Ribera del Duero region of Spain. The wine is predominantly Tinto Fino (Tempranillo), complemented by Merlot and Cabernet Sauvignon and aged for three months in second use French oak barrels.
Salvio’s label is decorated with the image of a magical bird, a chimera composed of many breeds of birds. It symbolises the magic of the vineyard located in the forest from which it comes, representing Dominio de Elbio’s biodiversity and unique environment. Furthermore, David, a passionate birdwatcher, enjoyed the variety of birds on this farm from the first moment, reinforcing his connection with the project.
This is a new wine and a special buy from Majestic, the 2024 vintage. First of all, it must be said that Majestic have made some unusual mistakes on their website, ‘Domaine’ not ‘Dominio’ in the name, not just Tempranillo, not white and 14.5 percent not 15 percent ABV.
To get the most out of it, this wine really must be given time to breathe in a decanter or glass. The colour is very dark. Once given time to beathe, there is lovely deep dark fruit and a deep floral aroma. On tasting, concentrated dark fruit comes through with very light oak, marked acidity and medium to high tannins. While the winemaker’s site says the aim of this wine is to redefine the concept of freshness, I have had much fresher and lighter examples of Ribera in Tim Atkin’s tastings. Having tasted many Ribera del Duero wines, I think this sits firmly in the typical rich Ribera style with medium to high tannins, albeit with much less typical oakiness. Consequently, it is best with food unless you enjoy a firmer, more structured glass of wine on its own.
